I went into the kitchen the other day to slap together some tuna sandwiches, but suddenly got a creative twitch and wound up with something so tasty I had to share. A good food addict cannot be an addict alone.
Start by making your tuna salad. I prefer mine with boiled eggs, real mayo, spicy mustard and Mrs. Dash.
Then make your “cheaters” guacamole: avocados, salsa and garlic. Or if you have time, the real stuff is always best.
Lick the bowl clean AFTER you’ve used the guac. AFTER.
Toast only one of the two slices you will need for your sandwich. I was making two sandwiches, so I toasted two slices of bread.
Preheat the oven on broil.
Spread mayo on the toast.
Put the mayo-ed toast onto a baking sheet and top generously with tuna and cheese. I prefer provolone, but shredded mozzarella will work great, too. Do not put too much tuna on the sandwich — if there’s too much on it it will not heat through before the sides burn.
Broil the sandwich for three minutes. Love that golden bubbly cheese!
Time to put the other slice of bread for the other side of the sandwich in the toaster. Put the broiled half on your happy plate, and top it with guacamole and the new, warm slice of toast.
